Shakshuka (North African Poached Eggs in spiced tomato sauce)

GET READY TO COOK

Method:

1. In a frying pan, heat up some cooking oil to medium heat. Add onions and peppers; stir fry 4-5mins until soft and lightly charred.

2. Add North African Spice Paste and chopped tomatoes; mix well and lower heat to simmer for 8-10mins.

3. Divide the sauce into 10 bowls. Use the back of a large spoon to make a small well in the sauce and add a poached egg.

4. Garnish and serve with crusty bread.

Ingredients:

300g North African Spice Paste

800g tinned chopped tomatoes

10 large eggs, poached

200g sliced white onion

300g diced red peppers

Chopped coriander leaves to garnish

Optional: Crumbled feta cheese to garnish

Crusty bread to serve
